Pohutukawa or New Zealand Christmas Tree (Metrosideros Excelsa). Around Christmas time it smothers itself with masses of brilliant crimson to deep blood-red flowers. The Pohutukawa tree lives to be a thousand years old. The Maori used Pohutukawa bark and nectar in traditional medicines, to cure dysentery, stop bleeding and remedy coughs and colds. Pohutukawa Honey has a pale colour, but quite distinct (buttery) flavour and it is sweet, with a wonderful, subtle, salty taste. One of the most popular honey among New Zealanders
